TAS (totally awesome salad)

Makes 4 large portions

An amazing side dish to meat or fish or just a healthy dinner on a summer night.

WildFit Spring staple :)


Ingredients:

1/2 white cabbage or iceberg lettuce

1/2 english cucumber

1/2 yellow pepper

1/2 bunch coriander or/and parsley

1/2 bunch dill 6 small radishes thinly sliced

1/2 fennel bulb

1 tbs extra virgin olive oil

1 tbs vinegar

1 tsp salt

black pepper to taste


Method:

Slice the lettuce thinly, chop cucumbers and the yellow pepper as you like. Add the sliced radishes and green herbs. Season to taste.

Variation: add/substitute any green veggies that you like. I usually ad half of a fennel bulb or kohlrabi but I didn't have it this time.


One tip: check out the Magic Sauce that is amazing with this salad...


For Summer and Fall: add tomatoes and kohlrabi. Yummy.
